If you go through the documentation page it still showing Stripe (Beta) as available connector, but with Nov 2019 update i didn't find it either;
https://docs.microsoft.com/en-us/power-bi/desktop-data-sourcesAs possible with most (beta) connectors they are in testing phase & you can contact MS (open a ticket) to see when they will restore back Stripe (Beta) connector
Also, you can use Stitch which use API Key, CData which uses ODBC data connector to connect with 3rd party data sources.
You can outsource the task to build Stripe connector using custom connector SDK available

Thanks for clarifying that for me. I'd recommend reaching out to Power Bi directly to see if there's any way to directly connect your Stripe data to them, as they built their systems and would be more well equipped to see if there's any way to do this on their end.
